Miss K recently turned 5, and to celebrate birthdays at her pre school it is customary to bring in a platter of home made cupcakes to share with the class. While my cupcake-baking skills are getting better year by year they are still not that awesome, and I thought I’d try something a little different this time around. I remembered seeing a fabulous, easy-looking giant chocolate freckle pops idea over at Childhood 101, and thought I would put my own spin on it for Miss K’s special day. She loves marshmallows AND chocolate so I thought I would combine the two to make some marshmallow chocolate pops.
As with any cooking I do, these are super-easy, although it does get a little bit fiddly at times. Here is how to make them:
You will need:
• One 250g bag of dark chocolate melts
• One large bag of marshmallows (my bag was 500g)
• Sprinkles
• Cake pop sticks
• 2-3 trays or baking sheets lined with non-stick baking paper
• Small cello bags and curling ribbon to package them individually (optional)
To begin with thread the marshmallows in alternating colours on cake pop sticks – 3 per stick. Lay them out on the trays as you go.
Melt the chocolate in the microwave by setting it to the lowest power setting and microwaving for 60 seconds, stirring, and repeating until the chocolate is all melted. Once it begins to get more runny shorten the intervals of cooking to 30 seconds or less. It’s ready when shiny and glossy.
Hold each marshmallow pop over the bowl of melted chocolate and scoop a spoon of it over the top (on one side only). Lay back down on the tray and add a teaspoon of sprinkles. Repeat until all the pops are done. Let them stand on the bench until the chocolate has turned hard (or in the fridge if you have the space).
Tie a cello bag on each pop with a piece of the curling ribbon and you’re done. Cute little chocolate pops that nearly all kids will love.

Hi Elle, I used standard size lollipop sticks (I think they were actually cake pop sticks) and small cello party bags, but I made these a while ago and don’t have the exact measurements. The marshmallows were the regular sized ones, not the mini or large ones. That’s how I made my version but if you wanted to use large marshmallows you could definitely do that and stick them on a paper straw or larger sized pop stick, and use larger sized cello bag or square of cello wrap that suits.
